My version of Nigellas African drumsticks.
Easy! Reheats well. And inexpensive. Perfect.
Ingredients:
1/3 cup Worcestershire sauce
1/4 cup tomato sauce or ketchup
2 teaspoons English mustard powder
1 teaspoon ground ginger
2 Tablespoons apricot jam
1 onion peeled and chopped
8 chicken drumsticks
1 teaspoon garlic oil
A few chopped shallots for garnish (optional)
Add oil to slow cooker
Onions, drumsticks and pour over sauce
Place tea towel under lid so not too liquidy
Directions:
I cooked for 3 hours on high but would work prob 4.5 hours on low ( I turned it once)
When done I placed the chicken in a casserole dish and put the sauce in a saucepan and cooked it fairly high to reduce it and thicken ( I don’t like adding flours) stir when doing this ( it may look a little separated but will come back together)
Pour over casserole and served or cover and keep to reheat later.
Fabulous with steamed rice and greens or a big green salad.
Oh I add a few chopped shallots for garnish
