Slow Cooker Loaded potatoes
Ingredients :
4 potatoes
5 diced bacon rashers (fat removed)
1 chopped onion
1 chopped red pepper
Olive oil
Smoked paprika
Garlic granules
Onion granules
Pinch of chilli flakes
Handful of grated cheese
Mozzarella
Spring onions to serve
Instructions:
Threw in 4 peeled and chunky cut jacket potatoes (needed using but I guess any potatoes will do).
Tossed them in a bit of olive oil. Then added a good sprinkle of smoked paprika, onion granules and garlic granules. A pinch of chilli flakes, the bacon and 1 chopped onion. Gave a good mix. Then left on high, tea towel under lid, for about 4 hours, stirring occasionally.
Threw the pepper, grated cheese, and mozzarella on top for the last half hour or so.
Then served with spring onion. We had this along side a little Bbq and it was delish even the kids ate it all!
I didn’t pre boil the potatoes and I didn’t add any stock or water.
