Cherry and chocolate chip sponge cake

Cherry and chocolate chip sponge cake…getting the hang of this cake malarkey and kids are loving it, not been told am obsessed with my slow cooker since they discovered I could make cakes in it.

Ingredients:

6oz self raising flour
3 eggs
6oz caster sugar
1/2 tsp baking powder
6oz margarine
150g choc chips
100g French glacé cherries

Cherry and chocolate chip sponge cake

Directions:

Method: mix butter and sugar until smooth, add eggs and mix until all blended. Add flour a little at a time and mix well until batter is smooth. Add chocolate chips, cherries & mix well. Grease a Pyrex bowl with a little margarine. Place mixture into bowl and cover with foil. Place bowl in slow cooker and add boiling water into the slow cooker up to half way up the bowl. Cover and cook on high for around 2 to 2 1/2 hours check if cooked after 2 hours by poking a skewer into cake if comes out clean it’s cooked. Remove from slow cooker and leave to cool for 10 minutes then remove from bowl by tipping it upside down and serve with whatever you fancy.
