Slow Cooker Carrot & Coriander soup Recipe.
Prepped this last night, popped slow cooker on this morn, was ready for lunch and has made enough to freeze 5 generous portions.
And I very nearly stuck to a recipe.
Ingredients:
I upped the garlic, added the ginger and reduced the liquid from the original recipe.
1 large finely chopped onion.
3 finely chopped cloves of garlic.
1 tbsp ground coriander.
1 kg grated carrots.
1 litre (ish) vegetable stock
1 inch/2½cm fresh ginger.
A good grind of salt & black pepper.
1 generous handful fresh coriander.
Directions:
Cream to serve.
Chuck in all the ingredients – except for the coriander and cream.
High for 4/5 hours.
Blend until smooth or partially smooth, depending on how you like it.
Add chopped fresh coriander.
Serve with a splash of cream.
