My take onπ Slow Cooker Lush Lemon Curd turned out fabulous If you wish to try here is what I did..
Ingredients:
4 oz. unsalted butter
12 oz. caster sugar
Rind and juice of 3 lemons
4 beaten eggs
Directions:
Melt butter, sugar in a pan add juice and rind of lemons and stir until sugar is dissolved. Leave to cool for 5 minutes add strained eggs gradually.
Place in a pudding basin which fits in your slow cooker, cover with foil. Place in slow cooker add water to come up the sides of the basin, cook for 2 1/2 to 3 hours on low, stir maybe once or twice when you pass the kitchen. When cooked mixture should be thick. Warm 2 sterilized jars, spoon in mixture top with a waxed disc, leave to cool completely and then seal with lid. Enjoy
