Slow cooked vegetarian tagine done in the slow cooker. So easy and delicious.
Ingredients:
1 red pepper chopped
1 green pepper chopped
2 onions sliced
1 aubergine chopped
1 courgette chopped
Half bag of frozen butternut squash cubes
2 cloves garlic chopped
1 tin chopped tomatoes
1 tin chickpeas – drained
Handful of dried apricots
1 tsp ground cumin
1 tsp ground cinnamon
2 tsp paprika – I use one smoked, one not
1 tsp mild chilli powder – optional
2 tsp ground coriander
Directions:
Mix well. Cook on high for 4-5 hours or low 8 hours or really until the veg is at the texture you like. Add lemon juice and fresh coriander when serving to really make it pop. Serve with cous cous.
I did stir a few times as I was at home but think it would be fine on low all day without.
