Lemon Key Lime Pie.. And now for something a little different.
Base
1 packet of biscuits
Enough soft butter to combine into wet sand texture
Blitz together and then press into a cake tin lined with baking paper. Put in fridge while making filling.
Filling
3 egg yolks
1 tin condensed milk
Mix until combined then add
1/2 cup of lime juice
Mix well.
Pour filling into biscuit base and bake in slow cooker. Mine took about 2 1/2 hours (my slow cooker doesn’t have a low or high setting, just 6 or 8 hours)
Once cooled top with cream.
If you are going to make lemon meringue:
4 egg whites
¼ cup caster sugar
Directions:
Beat eggs until they form soft peaks, add caster sugar and beat for another 2 minutes at medium speed or until it looks right. (don’t take it too far or eggs will split)
Then put the meringue mix on top of the filling before putting in slow cooker.
Please excuse the presentation in my picture. This was a slap on just to try it and see if it works. I’m the only on in our house who eats it.
