OH is poorly so made him a slow cooked, home made chicken soup. Very warming and very tasty with enough left over to freeze.
Ingredients:
1x medium chicken
2x leeks (halved and sliced)
2x carrots (diced small)
1x onion (chopped)
2ltr chicken stock
1x sprig of thyme
1x bay leaf
2x cloves of garlic (grated)
1x thumb of ginger (grated)
1x teaspoon chillies
1x lemon juice
Directions:
Make a bed of veg, garlic and ginger in slow cooker.
Place thyme and bay leaf of top of veg.
Mix chilles with chicken stock, add to slow cooker.
Put chicken on top.
Low for 7.5 hours.
Remove chicken, debone, shredd and add back to to sc.
Add lemon juice and give it a good stir.
Leave for a further 30 minutes.
Serve with rustic bread.
